 2 lbs. boneless chicken pieces, skinned<br />

<p> Combine all ingredients in small bowl and set aside.<br />
 Cut chicken pieces in 2&#8243; squares and place in large bowl. Stir in egg, salt, pepper, and 1<br />
 T oil andmixwell. Stir cornstarch and flour together. Add chicken pieces, stirring to<br />
 coat.<br />
 Heat oil for deep frying in wok or deep fryer to 375. Add chicken pieces, a small batch<br />
 at time, and fry 3 to 4 minutes or until golden and crisp. (Do not overcook or chicken will<br />
 be tough.) Remove chicken from oil with slotted spoon and drain on paper towels. Set<br />
 aside.<br />
 Clean wok and heat 15 seconds over high heat. Add 1 T oil. Add ginger and garlic and<br />
 stir fry until fragrant. Add and stir fry crushed chiles and green onions. Add rice wine<br />
 and stir 3 seconds. Add Orange Sauce and bring to boil. Add cooked chicken, stirring<br />
 until wellmixed. Stir water into remaining 1 T cornstarch until smooth. Add to chicken<br />
 and heat until sauce is thick. Stir in 1 teas. sesame oil. Serve at once.</p>

<p>Combine all the ingredients in a medium bowl, except olive oil and season with salt and pepper to taste.<br />
 Heat the oil in large saute pan over medium-high heat.<br />
 Roll the mixture into 1 1/2 inch balls and fry until golden brown, but not cooked through completely.<br />
 (Remove with a slotted spoon to a plate lined with paper towels.)</p>
<p>(In general, most people use just ground beef in their spaghetti sauce. Instead we suggests the combination of three meats: ground pork, ground veal, ground beef &#8211; the same meat combination used for meat loaf.<br />
 Veal and pork can make this dish a little more expensive, but whether it is a meat sauce or a sauce with meatballs, the added depth of flavor truly surpasses that of a singular ground beef sauce).</p>

Brown hamburger adding sliced mushrooms &amp; diced onions about 1/2 way through the browning.<br />
When brown, reduce heat to low and add 2 cans cream of mushroom soup &amp; 1/4 C. sour cream and let simmer 5 min. until heated through.<br />
Put hamburger mixture in a 13 X 9 casserole dish and top with corn and then mashed potatoes and then cheddar cheese.<br />
Cover with foil and bake in 400 degree oven for 30 min.</p>

<p>Directions</p>
<p>Heat olive oil in a saucepan, add wine and lemon juice, when mixture starts to boil, place shrimp in pan an cook on medium heat until shrimp curls and they are done.</p>
<p>Remove shrimp but leave wine mixture in pan. In the same saucepan add onion and garlic salt, saute until the onions are transparent.</p>
<p>Add flour and water paste, stir and cook until sauce is thick.<br />
Pour cream in sauce, stir, add the cheeses one at a time and w hisk constantly after each addition.<br />
Sauce should be a medium thick consistency and smooth, if sauce is too thick add a little water and whisk.</p>
<p>Remove from heat.</p>
<p>Presentation</p>
<p>Place Italian bread on serving tray in an &#8220;X.&#8221; Arrange shrimp in the middle of the placed bread.<br />
Spoon sauce in the middle of the bread covering the shrimp.</p>
<p>Sprinkle with sliced green onions, olives, and tomatoes.</p>
<p>Sprinkle crushed red pepper on top.</p>
<p>Sprinkle more Parmesan cheese on top if you would like.</p>

<p>Directions</p>
<p>Saute pancetta until begins to brown.<br />
Add butter, shallots, and shrimp.<br />
Cook until shrimp are evenly pick but still translucent.<br />
Add chicken, salt, pepper, and mix thoroughly.<br />
Add granita sauce and 1/2 cup of Parmesan cheese and simmer until sauce thickens.<br />
In a large bowl, combine shrimp and chicken mixture with precooked pasta.<br />
Place this mixture into single serving dishes or one large<br />
casserole dish.<br />
Top with remaining cheese and pimentos and sprinkle with paprika.<br />
Bake at 475 for 10-15 minutes.<br />
Remove and garnish with fresh rosemary sprig. Serves six.</p>

<div id="_mcePaste">Don&#8217;t get the oil too hot or you&#8217;ll get a major spatter when adding the other liquids.</div>
<div id="_mcePaste">Add ginger and garlic to the pan and quickly add the soy sauce and water before the garlic scorches.</div>
<div id="_mcePaste">Dissolve the brown sugar in the sauce, then raise the heat to about medium and boil the sauce for 2 to 3 minutes or until the sauce thickens. Remove it from the heat.</div>
<div id="_mcePaste">Slice the flank steak against the grain into ¼&#8221; thick bite-size slices.</div>
<div id="_mcePaste">Tilt the blade of your knife at about a forty five degree angle to the top of the steak so that you get wider cuts.</div>
<div id="_mcePaste">Dip the steak pieces into the cornstarch to apply a very thin dusting to both sides of each piece of beef.</div>
<div id="_mcePaste">Let the beef sit for about 10 minutes so that the cornstarch sticks.</div>
<div id="_mcePaste">As the beef sits, heat up one cup of oil in a wok (you may also use a skillet for this step as long as the beef will be mostly covered with oil).</div>
<div id="_mcePaste">Heat the oil over medium heat until it&#8217;s nice and hot, but not smoking.</div>
<div id="_mcePaste">Add the beef to the oil and saute for just two minutes, or until the beef just begins to darken on the edges.</div>
<div id="_mcePaste">You don&#8217;t need a thorough cooking here since the beef is going to go back on the heat later.</div>
<div id="_mcePaste">Stir the meat around a little so that it cooks evenly.</div>
<div id="_mcePaste">After a couple minutes, use a large slotted spoon to take the meat out and onto paper towels, then pour the oil out of the wok or skillet.</div>
<div id="_mcePaste">Put the pan back over the heat, dump the meat back into it and simmer for one minute.</div>

½ cup corn masa (corn flour)<br />
2 tbsp all-purpose flour</p>

<p>¼ cup sour cream<br />
½ avocado, chopped<br />
2 tbsp fresh cilantro, coarsely chopped</p>

<div>Prepare salsa verde by combining all ingredients (tomatillos, green chilies, green onion, cilantro, sugar, cumin, salt, and pepper) in a food processor on high speed. Cover and chill.</p>
<p>Prepare tomato salsa by combining all ingredients (diced tomato, onion, cilantro, lime juice, jalapeno, salt, and pepper) in a small bowl. Cover and chill.</p>
<p>Prepare southwestern sauce by combining all ingredients (mayonnaise, vinegar, water, sugar, chili powder, paprika, cayenne, onion powder, salt, and garlic powder) in a small bowl. Cover and chill.</p>
<p>Preheat oven to 400°F.</p>
<p>Prepare the tamale cakes by chopping 1 cup of the frozen corn in a food processor until it&#8217;s coarsely pureed. Combine pureed corn with softened butter, sugar, and salt. Blend well with electric mixer until smooth.</p>
<p>Add masa and flour and blend well. Mix in the remaining ½ cup of frozen corn kernels by hand.</p>
<p>Measure ½ cup portions of the mixture and form it into 3&#8243; wide patties with your hands.<br />
Arrange the patties on a baking sheet and bake for 25 to 30 minutes or until the cakes are browned on the bottom.<br />
Carefully flip all cakes with a spatula and bake for an additional 5 to 7 minutes or until other side is browned.</p>
<p>While the cakes are baking, spoon a portion of the salsa verde onto a plate or platter (you may want to heat up your plate in the oven for a bit to help warm the sauce).<br />
You&#8217;ll need to use enough salsa verde to coat the entire plate &#8212; it should be about ¼&#8221; deep.<br />
Arrange the tamale cakes side-by-side on the salsa verde. Spoon a dollop of sour cream onto each tamale cake.<br />
Drizzle the southwestern sauce over the cakes in a crisscross patter (use a squirt bottle if you&#8217;ve got one).<br />
Spoon some tomato salsa over the cakes, followed by the chopped avocado.<br />
Finish off the plate by sprinkling the coarsely chopped cilantro leaves over the top.</p></div>
